Mejicano Quiche

This quiche recipe with a Mejicano tortilla base makes for a quick and tasty meal. 

 

INGREDIENTS

  • 6 eggs
  • 6 slices of bacon
  • ½ cup (120 mL) grated cheese
  • ½ cup milk
  • Sea salt and freshly ground pepper to taste
  • 3 Burrito-style Mejicano tortillas (12 in.)
  • Vegetable oil to grease the pan
  • 2-3 sprigs of parsley

STEPS

  • Preheat the oven to 350°F.
  • In a skillet, brown the bacon.
  • Once browned, cut into small pieces.
  • Oil the bottom and sides of a large pan. 
  • Layer the 3 tortillas in the pan.
  • Break the eggs into a large bowl, add the milk, salt and pepper, and mix well.
  • Add the egg mixture to the pan, along with the bacon and grated cheese, and spread evenly over the entire surface.
  • Bake for 30 to 40 minutes.
  • Garnish with chopped fresh parsley.
