STEPS
- Preheat the oven to 375 °F.
- In a large skillet, add oil and sauté the ground beef. Once the meat is partially cooked, add the spices and black beans, coarsely mashing them with the ground beef.
- Add the corn and salsa, and cook for another 5 minutes on medium heat.
- Place a tortilla in a pie plate, making sure that the tortilla covers the entire plate (like a classic pie crust).
- Add the hot mixture to the pie plate and cover with the other tortilla.
- Top with grated cheese.
- Bake for 10 to 15 minutes or until the cheese browns.
- While the pie is baking, wash the pepper and cilantro.
- Slice the pepper into thin rounds and coarsely chop the cilantro.
- Remove the pie from the oven, cut into wedges and arrange the wedges on a plate.
- Garnish with sour cream, cilantro and pepper rounds.
- Serve with a green salad, if desired.
