Mexican taco pie

INGREDIENTS

  • 2 Mejicano regular tortillas (10 or 12 in., depending on the size of your pie plate)
  • 1 lb (450 g) lean ground beef
  • 1 cup (240 mL) corn kernels
  • 1 cup (240 mL) black beans
  • 1 cup (240 mL) of your favourite salsa (see recipe)
  • 1½ cups (360 mL) grated cheese
  • ¼ cup (60 mL) Mexican spice blend (see recipe)
  • 1 cup (240 mL) sour cream
  • A few sprigs of fresh cilantro
  • 1 jalapeno pepper
  • ¼ cup (60 mL) vegetable oil

STEPS

  • Preheat the oven to 375 °F.
  • In a large skillet, add oil and sauté the ground beef. Once the meat is partially cooked, add the spices and black beans, coarsely mashing them with the ground beef. 
  • Add the corn and salsa, and cook for another 5 minutes on medium heat. 
  • Place a tortilla in a pie plate, making sure that the tortilla covers the entire plate (like a classic pie crust).
  • Add the hot mixture to the pie plate and cover with the other tortilla. 
  • Top with grated cheese.
  • Bake for 10 to 15 minutes or until the cheese browns.
  • While the pie is baking, wash the pepper and cilantro.
  • Slice the pepper into thin rounds and coarsely chop the cilantro.
  • Remove the pie from the oven, cut into wedges and arrange the wedges on a plate. 
  • Garnish with sour cream, cilantro and pepper rounds.
  • Serve with a green salad, if desired.
