Egg Flight-Style Tacos

Join the latest TikTok trend with our Egg Flight-Style Tacos. Have fun dressing up your mini tacos with all sorts of temping ingredients. It’s easy, fast, and oh-so tasty!

 

INGREDIENTS

  • 6 regular, 10-inch Mejicano tortillas
  • 1 cup (160 g) turkey, cooked and shredded
  • 8 cooked shrimp, tail off
  • 1 cooked chicken breast, cubed
  • ½ a cauliflower, cut into florets
  • ½ cup (120 ml) whole kernel corn, drained
  • ½ cup (120 ml) feta cheese, crumbled
  • 1 cup (240 ml) marbled cheddar cheese, grated
  • 1 cup (240 ml) iceberg and romaine lettuce, chopped
  • 1 cup (240 ml) red cabbage, thinly sliced
  • 1 cup (240 ml) Mejicano salsa, or any other brand
  • ½ cup (120 ml) guacamole or avocado crema
  • 1 Lebanese cucumber
  • 1 jalapeno pepper
  • 1 cup (240 ml) fresh cilantro, chopped
  • 2 tsp (10 ml) Mexican seasoning
  • 1 tsp (5 ml) chipotle pepper powder
  • 6 limes
  • Sea salt and freshly ground pepper, to taste

 

STEPS

  1. Season the shredded turkey with Mexican seasoning and set aside. 
  2. Season the shrimp with a pinch of sea salt, pepper, and lime juice, and set aside. 
  3. Season the chicken cubes with a bit of Mexican seasoning and chipotle pepper powder. Add extra chipotle for a spicier, smoky flavour. 
  4. Season the cauliflower florets with a dash of oil and Mexican seasoning. Bake at 350°F for 15 minutes or until the florets are nicely roasted. Set aside. 
  5. Drain the corn kernels, season with a pinch of Mexican seasoning and bake at the same time as the cauliflower. Set aside. 
  6. Using a 2.5-inch cookie-cutter, cut out mini tortillas (about 8 per tortilla) and set aside.
  7. Cut the cucumber and jalapeno pepper into thni rounds and thinly slice de cabbage and lettuce. Set aside.


Assembly:

  1. When ready to serve, reheat the mini tortillas, turkey, chicken cubes, shrimp, roasted cauliflower and sweet corn for a few seconds in the microwave. 
  2. On each mini tortilla, use condiments and lettuce as a base, followed by your choice of protein and veggies.
  3. Decorate with cucumber and jalapeno rounds and finish with feta and cheddar cheese and chopped cilantro.
