Pork Dumpling-Style Smash Tacos

INGREDIENTS

For the tacos: 

  • 6 Mejicano wheat tortillas, 4.5”
  • About 300 g ground pork, lean
  • 2 garlic cloves, finely chopped
  • 10 ml (2 tsp) fresh ginger, chopped
  • 2 green onions, finely chopped
  • 5 ml (1 tsp) chili flakes
  • A few cilantro sprigs, finely chopped
  • 15 ml (1 tbsp) rice vinegar
  • 15 ml (1 tbsp) soy sauce
  • 15 ml (1 tbsp) toasted sesame oil
  • 15 ml (1 tbsp) oyster sauce
  • 2 Lebanese cucumbers, sliced
  • A few cilantro leaves, to garnish

 

For the sauce:

  • Juice of 1 lime
  • 15 ml (1 tbsp) soy sauce
  • 30 ml (2 tbsp) toasted sesame oil
  • 5 ml (1 tsp) brown sugar
  • 2.5 ml (1/2 tsp) chili flakes
  • 5 ml (1 tsp) fresh ginger, grated
  • 10 ml (2 tsp) sesame seeds
  • A few cilantro sprigs, finely chopped
  • 1 green onion, finely chopped

STEPS

  1. In a large bowl, combine the ground pork, garlic, ginger, green onions, cilantro, oyster sauce, soy sauce, rice vinegar, sesame oil, and chili flakes. Mix until everything is well incorporated. 
  2. Divide the mixture into 6 equal portions and spread evenly on the tortillas. 
  3. Heat a frying pan over medium-high heat. Cook the tortillas, meat side down, for 2-3 minutes. Flip and cook for another few minutes until the meat is well done and the tortilla is crispy. 
  4. In a small mixing bowl, mix the lime juice, soy sauce, sesame oil, brown sugar, ginger, chili flakes, green onions, cilantro, and sesame seeds. Set aside. 
  5. Garnish each taco with cucumber slices, drizzle with the sauce and a bit of cilantro. Serve right away.
