Mejicano shrimp rolls

Our Mejicano shrimp rolls are a tasty alternative to traditional lobster rolls. Easy on your budget and your taste buds!

 

INGREDIENTS

  • 12 4.5 in. taco tortillas
  • 2 lbs (900 g) cooked Nordic shrimp
  • 2 peeled avocados
  • ½ chopped red onion
  • ½ bunch of dill 
  • 1 cup (240 mL) sour cream
  • Juice of 2 limes
  • ⅛ teaspoon (0.62 mL) chipotle pepper powder
  • Salt and pepper to taste

STEPS

  • Cut up the 2 avocados into cubes.
  • Wash and chop the dill.
  • Finely chop the red onion.
  • In a large bowl, combine the shrimp, avocado, dill, onion, sour cream, lime juice and chipotle pepper powder.
  • Add salt and pepper to taste.
  • On the grill or in a pan, heat the tortillas for a few seconds on each side.
  • Fill the tacos with the shrimp mixture. Enjoy immediately!
