Apple Raspberry Turnovers

Using Mejicano tortillas as turnover pastry is easy, budget-friendly, and gives turnovers a nice crispy texture when they come out of the oven. This fruit-filled treat, flavoured with a touch of cinnamon, is best enjoyed with a drizzle of caramel!

 

 

INGREDIENTS

  • 3 Burrito-style Mejicano tortillas
  • 2 tbsp (30 ml) butter, melted
  • 1 cup apple pie filling
  • A few raspberries
  • 2 tbsp (30 ml) sugar
  • 1/8 tsp (1 ml) ground cinnamon
  • Caramel sauce, to serve (optional)

STEPS

  1. Preheat oven to 400 °F and place the rack in the centre. Line a baking sheet with parchment paper and set aside. 
  2. On a clean and dry work surface, cut tortillas lengthwise into 3-inch strips. 
  3. Place 2 tbsp (30 ml) of apple filling and a few raspberries on the tortilla strip, on the end closest to you. Carefully fold over the corner to create a triangle, then continue to fold in a triangle for the length of the strip. Repeat with the rest of the tortilla strips and fruit. 
  4. Place the turnovers on the baking sheet, making sure to put the seam side down and brush with the melted butter. 
  5. In a small bowl, combine the sugar and cinnamon, and sprinkle on top of the turnovers.
  6. Bake for 12-15 minutes, until golden and crisp. Serve with caramel sauce.
