Tortilla lollipops

Make your children’s parties a culinary adventure with these colourful tortilla lollipops! 

 

 

INGREDIENTS

  • 4 regular Mejicano tortillas (10 in.)
  • 2 Mejicano salsa-flavoured tortillas (10 in.) 
  • ¼ cup (60 mL) cream cheese
  • 6 slices of ham
  • 12 slices of turkey
  • 4 strips of cooked bacon
  • 6 to 10 large curly or romaine lettuce leaves
  • 8 sweet gherkins
  • 2 Lebanese cucumbers
  • 12 cherry tomatoes
  • 6 large slices of mozzarella
  • 1 cup (240 mL) mayonnaise 

 

STEPS

  • Wash the Lebanese cucumbers and cut in half lengthwise. Set aside.
  • Wash the cherry tomatoes and lettuce leaves. Set aside.
  • Cut each large slice of mozzarella into two triangles. Set aside.
  • Place the 6 tortillas on a work surface. Spread 10 mL of cream cheese along the upper edge of each tortilla. The cream cheese will help seal the wrap.
  • Spread a bit of mayonnaise on each tortilla, then add 2 cheese triangles and 1 or 2 lettuce leaves. Be sure to cover the entire tortilla.
  • On 2 of the 4 regular tortillas, add the slices of ham and arrange the gherkins lengthwise.
  • On each of the other 2 regular tortillas, add the slices of turkey and 2 strips of bacon. Then add the halved Lebanese cucumbers.
  • Top with 6 cherry tomatoes. Place them along the entire length, so that each of the 6 bites includes a tomato.
  • Complete the wraps by folding the bottom edge of the tortilla upward, over the filling, and rolling tightly.
  • Cut into roughly 1-in. slices and insert a decorative straw.
  • Serve with raw veggies and other savouries.
