Seasonal Sheet Pan Veggies

We adore sheet pan meals because they’re so simple and quick to prepare. Here’s our Mejicano version of seasonal sheet pan veggies: perfect with fajitas or tacos. 

 

 

INGREDIENTS

  • 2 zucchinis
  • 3 coloured peppers
  • 1 red onion
  • 8 vine tomatoes
  • ⅓ cup (80 mL) olive oil
  • 3 sprigs of fresh thyme
  • 3 sprigs of fresh oregano
  • 3 cloves of garlic
  • Sea salt and freshly ground pepper to taste

STEPS

  • Heat the oven to 350°F.
  • Cut the zucchini and peppers into strips.
  • Cut the onion in half, then into thin slices.
  • Cut the tomatoes and garlic cloves in half.
  • Place all the veggies in a large bowl and add the olive oil and herbs.
  • Season with salt and pepper to taste.
  • Place all the ingredients on a baking sheet and roast for 15 to 20 minutes.
  • Serve with slightly warmed tortillas or as a side dish.
  • Add your favourite garnishes.
