STEPS
- Heat the oven to 350°F.
- Cut the zucchini and peppers into strips.
- Cut the onion in half, then into thin slices.
- Cut the tomatoes and garlic cloves in half.
- Place all the veggies in a large bowl and add the olive oil and herbs.
- Season with salt and pepper to taste.
- Place all the ingredients on a baking sheet and roast for 15 to 20 minutes.
- Serve with slightly warmed tortillas or as a side dish.
- Add your favourite garnishes.
