STEPS
- In a saucepan, sauté the onions in oil 2 to 3 minutes. Add the rice and cook for 3 to 4 minutes until the rice becomes translucent.
- Add all the other ingredients and bring to a boil. Lower the heat and simmer, covered, for 25 minutes.
- Remove from heat and let stand a few minutes.
- Garnish with cilantro and lime wedges.
