Mexican rice

Add a little pizzazz to your meals with this Mexican spiced rice, a versatile, tasty side dish that will appeal to everyone around the table.

 

 

INGREDIENTS

  • 1 tablespoon (15 mL) vegetable oil
  • 1 onion, finely chopped
  • 1 cup (240 mL) long grain white rice
  • 1½ cups (360 mL) chicken broth (330 mL water + 30 mL liquid bouillon concentrate)
  • ½ can (75 mL) tomato paste
  • 2 tablespoons Mejicano Mexican spice blend (see recipe)
  • 1 tablespoon (15 mL) fresh cilantro, chopped
  • A few lime wedges 

STEPS

  • In a saucepan, sauté the onions in oil 2 to 3 minutes. Add the rice and cook for 3 to 4 minutes until the rice becomes translucent.
  • Add all the other ingredients and bring to a boil. Lower the heat and simmer, covered, for 25 minutes.
  • Remove from heat and let stand a few minutes.
  • Garnish with cilantro and lime wedges.
