Try our easy and delicious Meal Prep Taco Bowls! You can make this quick and balanced meal for 4 in just 30 minutes. Perfect for meals to-go or busy weeknights. Serve with our tortillas for a complete meal.

 

 

INGREDIENTS

  • 2 cups rice, cooked
  • 1 cup corn kernels, cooked
  • 1 cup Mejicano salsa
  • 2 cups iceberg lettuce, shredded
  • ½ cup cilantro, chopped

 

For the veggies

  • 1 tbsp vegetable oil
  • 1 yellow pepper, cut into strips
  • 1 orange pepper, cut into strips
  • 1 red onion, finely chopped

 

For the meat

STEPS

  1. Heat the oil in a pan on medium-high heat, and fry the peppers and onion for 5 to 6 minutes, until soft. Set aside. 
  2. In the same pan, add the ground meat and brown for 4 to 5 minutes. Add the remaining meat ingredients and cook for another 2 minutes. Set aside. 
  3. Pour the ingredients into Mason jars in the following order: cooked rice, meat, veggies, corn, salsa, lettuce, and cilantro. 
  4. Serve with Mejicano tortillas.
