STEPS
- Heat the oil in a pan on medium-high heat, and fry the peppers and onion for 5 to 6 minutes, until soft. Set aside.
- In the same pan, add the ground meat and brown for 4 to 5 minutes. Add the remaining meat ingredients and cook for another 2 minutes. Set aside.
- Pour the ingredients into Mason jars in the following order: cooked rice, meat, veggies, corn, salsa, lettuce, and cilantro.
- Serve with Mejicano tortillas.
