STEPS
- Cut the tortillas into thin strips and place on an oven-safe sheet. Sprinkle with a bit of olive oil and some Tex-Mex spices.
- Bake at 350°F for 10 to 12 minutes until the strips are golden brown. Set aside.
- Wash the lettuce and tear into a large plate.
- Add the lentils, black beans, red cabbage, avocado and cherry tomatoes.
- Stir together the olive oil, cumin and lemon juice, and set aside.
- Toss the vegetable mixture with the vinaigrette and seasoned tortilla strips.
- Serve with additional lemon wedges.
