Layered Mexican Dip

This recipe is guaranteed to be a hit at your next pool party or happy hour. Serve in individual glass cups or in a large bowl to share.

 

 

INGREDIENTS

  • 1 can refried beans 
  • 1 jar of your favourite salsa
  • 3 ripe avocados
  • 1 ½ cups (375 mL) sour cream
  • 1 ½ cups (375 mL) yellow cheddar, grated 
  • 2 ripe tomatoes, finely diced
  • 1 jalapeño pepper, thinly sliced
  • A few sprigs of cilantro, chopped
  • Juice of 3 limes
  • Sea salt and pepper

STEPS

For the guacamole

  • Cut avocados in half, remove pits, and scoop into a large bowl. 
  • Add lime juice and some of the chopped cilantro. 
  • Season with salt and pepper, to taste. 
  • Mash together until smooth.

 

For the dip

  • In a clear glass bowl, layer the refried beans, guacamole, sour cream, salsa, and grated cheese.
  • Decorate with tomatoes, jalapeno slices, and the remaining cilantro.
  • Serve with tortilla chips (see recipe).
