STEPS
- Pour the oil into a large pot and heat until the temperature reaches 350°F.
- On a cutting board, cut the tortillas into small triangles roughly 3-in. long.
- Combine the cinnamon with a little more than half the white sugar.
- Once the oil is hot, fry the chips. Remove them from the oil and immediately sprinkle both sides with the sugar and cinnamon mixture. Set aside.
- On the cutting board, dice the mango, kiwis and strawberries.
- Place the diced fruit in a large bowl along with the blueberries, the remaining sugar and the juice of half a lemon. Mix everything together.
- Place in a serving bowl and garnish with a few mint leaves.
