Buffalo Halloumi Wraps with Avocado and Lime Coleslaw

Try these wraps filled with creamy avocado, grilled halloumi, and a crunchy, minty coleslaw. A perfect blend of fresh and spicy flavours for a fast, gourmet meal.

 

INGREDIENTS

  • 2 Mejicano tortillas
  • 1 ripe avocado, sliced
  • 2 tbsp (30 ml) cream cheese

 

For the halloumi cheese

  • 4 slices halloumi cheese
  • 2 tbsp (30 ml) buffalo sauce, homemade or store-bought
  • Oil, for cooking 

 

For the coleslaw

  • 2 cups (500 ml) green cabbage, shredded
  • 4 mint sprigs, finely chopped
  • 2 tbsp (30 ml) mayonnaise
  • 2 tbsp (30 ml) honey
  • Juice and zest of 1 lime
  • Pinch of sea salt

STEPS

  1. In a bowl, mix the halloumi slices with the buffalo sauce. Stir well to coat evenly.
  2. In a lightly oiled pan, grill the halloumi slices for 2 minutes per side, until golden. Set aside
  3. In another bowl, blend all the coleslaw ingredients and stir well. Refrigerate.
  4. Spread the cream cheese over the top of the tortilla and cover with avocado slices, halloumi, and coleslaw. Roll and cut in 2 to serve.
