- Melt the butter in a large pan over medium heat. Add the apples, brown sugar, and cinnamon.
- Cook for 8 to 10 minutes, stirring often, until the apples are tender and golden.
- Lay a tortilla flat on your work surface.
- Spread ¼ of the caramelized apples over half of the tortilla and sprinkle with some of the grated cheese.
- Fold the tortilla into a half-moon shape.
- In a lightly oiled pan, fry each quesadilla 2-3 minutes per side until golden and crispy, and the cheese is melted.
- Cut each quesadilla into 2 or 3 triangles. Serve hot, either plain or with a scoop of ice cream, a drizzle of caramel, or a dollop of whipped cream.
