STEPS
- Wash and finely slice the red cabbage, carrots and kale. Set aside.
- Mix the mayonnaise, puréed ginger, sesame oil, soy sauce, and lime juice. Set aside.
- Cut the tofu into strips and pat dry.
- In a shallow bowl, mix the water, flour, salt and pepper.
- In a second bowl, add the panko breadcrumbs.
- Dip the tofu strips one at a time into the flour mixture, then roll in the breadcrumbs. Set aside.
- Preheat the air fryer to 400°F and cook the tofu strips for about 6 minutes per side. Set aside.
- Place the 2 tortillas on a clean work surface.
- Spread an arc of cream cheese on the top part of each tortilla. This will help the tortillas stick together.
- Add the red cabbage, carrots, and kale. Add 3 tofu strips and sprinkle generously with the Asian mayonnaise.
- Roll your wrap up by folding in the two sides, then the bottom of the tortilla and rolling up to close. Dig in and enjoy!
