Lentil avocado salad

This tasty salad will brighten up your next meal!

 

INGREDIENTS

  • 1 head of two-colour curly leaf lettuce
  • 1 can of lentils 
  • 1 can of black beans
  • 1 avocado, sliced
  • 10 cherry tomatoes, halved
  • ¼ cup (60 mL) thinly sliced red cabbage
  • 2 tortillas
  • Tex-Mex spices
  • Juice of 1 lemon
  • ¼ cup (60 mL) olive oil + extra for the tortillas
  • ½ teaspoon (2.5 mL) ground cumin
  • Salt and pepper to taste
  • Lemon wedges for garnish

STEPS

  • Cut the tortillas into thin strips and place on an oven-safe sheet. Sprinkle with a bit of olive oil and some Tex-Mex spices.
  • Bake at 350°F for 10 to 12 minutes until the strips are golden brown. Set aside.
  • Wash the lettuce and tear into a large plate.
  • Add the lentils, black beans, red cabbage, avocado and cherry tomatoes.
  • Stir together the olive oil, cumin and lemon juice, and set aside.
  • Toss the vegetable mixture with the vinaigrette and seasoned tortilla strips.
  • Serve with additional lemon wedges.
