INGREDIENTS

  • 1 whole-wheat Mejicano tortilla, cut into small strips. 
  • A splash of olive oil

 

For the salad

  • 1 can (540 ml) mixed beans, rinsed and drained
  • 1 cup rainbow Swiss chard stems, diced
  • 1 cup cucumber, peeled and finely diced
  • 1 cup salami, finely diced
  • 1 container (200 g) pearl-sized bocconcini, drained
  • ¼ chives, chopped

 

For the dressing

  • ¼ cup olive oil
  • Juice of 1 lemon
  • 1 tsp honey
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • ¼ tsp cumin powder
  • Salt and pepper, to taste

STEPS

  1. Place rack in the middle of the oven and preheat the oven to 350°F. 
  2. Place the tortilla strips on a baking sheet, sprinkle with olive oil, salt and pepper (to taste), and bake for 8 to 10 minutes. 
  3. In a bowl, whip together all the dressing ingredients and set aside. 
  4. Toss together all the salad ingredients in a large bowl. Add the dressing and combine well. Sprinkle with crunchy tortillas before serving.
