INGREDIENTS

  • 2 regular burrito-style Mejicano tortillas
  • ¼ cup butter, at room temperature
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • ¼ cup 35% cream

STEPS

  1. Position rack in the middle of the oven and preheat to 350°F. Grease a 20 cm pie plate and set aside.
  2. Spread 2 tbsp of butter over the entire surface of 1 tortilla and sprinkle with ¼ cup brown sugar, leaving a 2 cm strip around the edge of the tortilla.
  3. Roll up the tortilla into a cylinder and close it by pressing the tortilla into the butter to seal. Cut the roll into 12 to 14 rounds, about 1 cm thick. Repeat with the second tortilla.
  4. Place the roly-polys side by side in the pie plate and set aside.
  5. Combine the maple syrup and cream in a bowl and pour over the roly-polys. Bake for 25 to 30 minutes, until done and lightly golden.
  6. Allow to cool slightly before removing from the pie plate.

Note: Do not allow to cool completely, as the roly-polys will stick to the pie plate and be difficult to remove without breaking.
