Air-Fryer Crispy Tofu Wrap

Dig into this crispy tofu wrap for a healthy, delicious lunch! Fresh veggies, flavoured Asian mayo, and golden tofu combine in this quick air fryer meal to deliver satisfying crunch and lots of flavour. Enjoy! 

 

 

INGREDIENTS

  • 2 12-inch burrito-style Mejicano tortillas
  • 2 tsp (10 ml) cream cheese
  • 1 cup (240 ml) red cabbage, finely sliced
  • 1 cup (240 ml) carrots, finely julienned
  • 1 cup (240 ml) kale, finely sliced


For the mayonnaise

  • ¼ cup low-fat mayonnaise
  • 1 tbsp (15 ml) fresh ginger, puréed 
  • 1 tbsp (15 ml) sesame oil
  • 1 tbsp (15 ml) reduced-sodium soy sauce
  • Juice of 1 lime 


For the air fryer tofu strips

  • ½ block of tofu
  • ½ cup (120 ml) water
  • ¼ cup (60 ml) flour
  • ½ cup (120 ml) panko breadcrumbs
  • Pinch of sea salt and pepper

STEPS

  1. Wash and finely slice the red cabbage, carrots and kale. Set aside.
  2. Mix the mayonnaise, puréed ginger, sesame oil, soy sauce, and lime juice. Set aside.
  3. Cut the tofu into strips and pat dry. 
  4. In a shallow bowl, mix the water, flour, salt and pepper. 
  5. In a second bowl, add the panko breadcrumbs. 
  6. Dip the tofu strips one at a time into the flour mixture, then roll in the breadcrumbs. Set aside. 
  7. Preheat the air fryer to 400°F and cook the tofu strips for about 6 minutes per side. Set aside. 
  8. Place the 2 tortillas on a clean work surface. 
  9. Spread an arc of cream cheese on the top part of each tortilla. This will help the tortillas stick together. 
  10. Add the red cabbage, carrots, and kale. Add 3 tofu strips and sprinkle generously with the Asian mayonnaise. 
  11. Roll your wrap up by folding in the two sides, then the bottom of the tortilla and rolling up to close. Dig in and enjoy!
