Sharp Cheddar Queso Dip

This warm, melted cheese dip can be ready in just 10 minutes in the microwave. It’s a must-have at your next happy hour or sports-night with friends—your guests will be asking for more! 

 

INGREDIENTS

  • 3 cups (360 g) sharp cheddar, grated
  • 1 block (250 g) cream cheese, cubed
  • ½ cup (120 ml) blonde beer
  • 2 green onions, finely sliced
  • 1 jalapeno pepper, finely chopped 

STEPS

In the microwave: 

  1. Place all ingredients in a large, microwave-safe bowl or dish.
  2. Cook in the microwave for 2 minutes, stir, then cook for another 2 minutes, or until all the cheese is completely melted and the queso dip has a smooth texture.
  3. Serve with Mejicano tortilla chips, or over nachos. 

 

In the oven: 

  1. Place all ingredients in a large, oven-proof dish or skillet.
  2. Bake at 350°F for 30 minutes, stirring occasionally.  
  3. Serve with Mejicano tortilla chips, or over nachos.

 

In the slow cooker:

  1. Place all ingredients in the slow cooker. 
  2. Cook on low for 2 hours, stirring occasionally. 
  3. Serve with Mejicano tortilla chips, or over nachos.
