Holiday Salsa

Add a little Mexican flair to your next holiday party with this colourful salsa featuring pomegranate. Serve with tortilla chips for a guaranteed hit!

 

 

INGREDIENTS

  • ½ cup (120 ml) red onion, finely chopped
  • Zest and juice of 2 limes
  • 1 tsp (5 ml) sugar
  • 2 cups (500 ml) pomegranate seeds
  • 1 cup (240 ml) cucumber, finely diced 
  • 1-2 jalapeno pepper(s), deseeded and chopped
  • 1/3 cup (80 ml) fresh cilantro, chopped 
  • ¼ tsp (1.25 ml) ground cumin
  • Salt and pepper, to taste
  • Tortilla chips, to serve

STEPS

  1. In a bowl, mix together the onions, lime zest and juice, and sugar. Allow to stand for 15 minutes. 
  2. Add the rest of the salsa ingredients and stir well. Season to taste. You can let the salsa rest in the fridge for 1 hour to enhance the flavours! 
  3. Serve with tortilla chips.
