Pumpkin Hummus with Spooky Chips

Here’s a fun and healthy recipe to make with your family this Halloween! You can also serve it as a unique and tasty appetizer at your next autumn-inspired happy hour. Enjoy! 

 

 

INGREDIENTS

  • ½ can (540 ml) chickpeas, rinsed and drained
  • ¾ cup puréed squash or pumpkin, homemade or store-bought
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 1 tbsp maple syrup
  • 1 clove garlic
  • ½ tsp salt
  • 1/8 tsp ground cumin
  • 2 tbsp olive oil
  • 2-3 tbsp ice water

 

For the tortilla chips

  • A few Mejicano tortillas
  • Drizzle of olive oil
  • Salt and pepper, to taste

STEPS

  1. In a food processor, blend all the ingredients for the hummus until smooth. Set aside. 
  2. Preheat oven to 350°F and place rack in the middle. Line a baking sheet with parchment paper and set aside. 
  3. Using a cookie-cutter, cut tortillas into desired shapes.
  4. In a bowl, combine the cut tortillas, oil, and salt and pepper. 
  5. Spread out onto the baking sheet and bake for 10-12 minutes, or until golden and crisp. 
  6. Serve tortilla chips with the hummus.
