STEPS
For the guacamole
- Cut avocados in half, remove pits, and scoop into a large bowl.
- Add lime juice and some of the chopped cilantro.
- Season with salt and pepper, to taste.
- Mash together until smooth.
For the dip
- In a clear glass bowl, layer the refried beans, guacamole, sour cream, salsa, and grated cheese.
- Decorate with tomatoes, jalapeno slices, and the remaining cilantro.
- Serve with tortilla chips (see recipe).
