STEPS
- In a large skillet, heat the oil and butter over medium heat. Add the tortillas and sauté, stirring frequently for 4 to 5 minutes, or until the tortillas are golden and crisp.
- Lower the heat, and add the jalapeño pepper and garlic. Cook for 1 to 2 minutes, then gradually add the beaten eggs, about ¼ cup at a time, gently stirring after each addition, until the eggs are cooked but not completely set. You want them slightly runny. Season with salt.
- Remove from heat (the eggs will continue to cook with the residual heat) and add the grated cheese and cilantro.
- Serve with one of the above suggestions.
