Chorizo breakfast burrito

You’ll totally flip over these chorizo breakfast burritos . . . a real breakfast treat!

 

 

INGREDIENTS

  • 4 regular Mejicano tortillas (12 in.)
  • 6 eggs
  • 4 chorizo sausages
  • 4 cups (1 L) spinach leaves
  • 1 cup (240 mL) crumbled feta
  • Salt and pepper to taste
  • 2 tablespoons (30 mL) butter

STEPS

  • On a cutting board, coarsely chop the 4 sausages.
  • In a large skillet, melt the butter and add the 6 eggs. Scramble the eggs over medium heat.
  • Add the sausage and cook another 3-4 minutes.
  • Add the spinach and toss to wilt.
  • Add the crumbled feta and mix well. Remove from heat.
  • Place the 4 tortillas on a work surface. Put the egg, sausage, spinach and feta mixture in the middle of each tortilla.
  • Fold the sides and bottom edge of the tortilla inward, over the filling, and roll tightly.
  • Once the tortillas are carefully rolled, put them back in the large skillet over medium heat and brown both sides a few minutes.
  • Serve immediately. They’re best eaten hot!
