STEPS
- On a cutting board, coarsely chop the 4 sausages.
- In a large skillet, melt the butter and add the 6 eggs. Scramble the eggs over medium heat.
- Add the sausage and cook another 3-4 minutes.
- Add the spinach and toss to wilt.
- Add the crumbled feta and mix well. Remove from heat.
- Place the 4 tortillas on a work surface. Put the egg, sausage, spinach and feta mixture in the middle of each tortilla.
- Fold the sides and bottom edge of the tortilla inward, over the filling, and roll tightly.
- Once the tortillas are carefully rolled, put them back in the large skillet over medium heat and brown both sides a few minutes.
- Serve immediately. They’re best eaten hot!
