STEPS
- In a bowl, mix the cream cheese with the yogurt, lemon zest, and sugar and stir until evenly blended and smooth. Set aside.
- In a large bowl, whip the eggs with the milk and maple syrup and set aside.
- In a small microwavable bowl, combine the berries and maple syrup. Heat in the microwave for 1 minute, or until the berries begin to release their juices. Set aside.
- In a non-stick pan over medium heat, melt the butter. Dip the tortillas in the egg mixture and cook in the pan, one at a time, for 2-3 minutes per side, until golden.
- Open the tortilla and cover one half with a bit of the “crema”, garnish with berries, then re-fold the tortilla over the toppings.
- Serve with an extra drizzle of maple syrup.
