- Preheat oven to 400°F (200°C).
- Roast the veggies and chicken:
Place chicken strips and vegetables on a baking sheet and add olive oil and spices. Mix well, making sure everything is evenly coated. Bake for 25 minutes, or until everything is golden and tender. - Assemble the tortillas: Divide the chicken and veggie mixture between the tortillas. Top with grated cheese, and a bit of salsa or guacamole.
- Return to oven: Place the filled tortillas on a large, oven-proof plate. Reduce oven temperature to 375°F and bake 3 to 5 minutes more, until the cheese is melted and the edges are slightly crispy.
- Garnish and serve: Add fresh herbs (parsley or cilantro) and lime zest. Serve hot!
