STEPS
- Crumble the feta cheese and set aside.
- Cut the avocados in half and mash with a fork, set aside.
- In a large non-stick frying pan, heat the oil and fry the tortillas 30-45 seconds per side, until lightly coloured. Set aside.
- Divide feta cheese into 4 rounds, placed directly in the frying pan.
- Once the cheese is slightly melted, break an egg over each round and cook until set.
- Spread half an avocado on each of the tortillas and cover with the egg and feta.
- Season the eggs, add hot sauce to taste, and decorate with sunflower sprouts.
