Feta Breakfast Taco

Start your day in style with these tempting breakfast tacos! They’re the perfect combination of sunny side up eggs, tasty feta, creamy avocado, and a hint of spice, all ready in 15 minutes. A true morning treat!

 

 

INGREDIENTS

  • 4 4.5-inch taco-style Mejicano tortillas
  • 4 eggs
  • 1 cup (240 ml) feta cheese, crumbled
  • 2 ripe avocados
  • Hot sauce, to taste
  • Salt and pepper, to taste
  • 1 cup (240 ml) sunflower sprouts
  • 1 tbsp (15 ml) olive oil, to cook the tortillas

STEPS

  1. Crumble the feta cheese and set aside. 
  2. Cut the avocados in half and mash with a fork, set aside. 
  3. In a large non-stick frying pan, heat the oil and fry the tortillas 30-45 seconds per side, until lightly coloured. Set aside. 
  4. Divide feta cheese into 4 rounds, placed directly in the frying pan. 
  5. Once the cheese is slightly melted, break an egg over each round and cook until set. 
  6. Spread half an avocado on each of the tortillas and cover with the egg and feta. 
  7. Season the eggs, add hot sauce to taste, and decorate with sunflower sprouts
